Cheese Flavored Mini Buns

Bread flour 200g
Cake flour 50g
Sugar 30g
Cream cheese 60g
Salt 3g
Dry yeast 4g
Milk 160 ml
Butter 20g
Method :

1. Put all ingredients into the mixer bowl except for butter and salt. Knead for 5 minutes before adding salt and butter and continue kneading until you passed the window pane test.

2.  Leave the dough in the mixer bowl, covered and proof the dough until doubled its size.  Transfer dough on to the work top and deflate the dough. Let it rest for 10 minutes.  Divide dough into 16 pieces (about 30g each) and roll into balls before placing into a 8″ square pan. Make sure you grease the pan well before placing the buns in.

3. Cover with a cling wrap or damp towel and proof the buns again. Preheat oven to 190C. Before putting the buns to bake, reduce temperature to 180°C and bake for 25-30 min or until done. Remove from oven and immediately brush melted butter on the buns.  Leave to cool for 5 minutes before transfering to a rack to continue cooling.
