Cashew Nuts cookies


Cashew nut cookies shared by Lucinda Lau

250gms butter. (125g)
140gms icing sugar.  (70g)
300gms flour.  (150g)
100gms grounded cashewnut  (50g)
1/2 tsp baking powder.         (¼ tsp)
1 egg yolk( for egg wash add with a tablespoon of water).
100gms cashewnut halves.  (50g)


Sift flour together with baking powder.
Cream butter, vanilla essence with icing sugar until fluffy.
Add in flour and grounded cashew nuts (I make my own by grinding roasted cashew nuts until fine) and knead to form a soft dough.
Roll out the dough and use cutters to cut out cookies.
Place on lined baking tray. Brush a layer of egg wash and place a piece of cashew nut halves on each cookie.
Brush another layer of egg wash before baking in a preheated oven at 160° for 15-20 mins or until golden brown.
Cool completely before storing in airtight containers.


No cashew nuts shape cutter so cookies became round and flower shapes lol!!


This is all I got from the recipe using 250g butter!

        I am pretty sure most of the baking supplies shops carry this product.
