Peanuts Cookies adapted from here
200g biscuit flour /plain flour
100g icing sugar, sifted
200 grounded peanuts – I roasted for 15 minutes at 130C and then cooled before use
100ml peanut oil
Grind the grounded peanuts in a food processor with a few tablespoon of flour to make it more fine in order to achieve the melt in mouth version.
In a mixing bowl, mix flour, icing sugar and grounded peanut together before adding peanut oil and knead to form a soft dough.
Divide dough into 10g pieces and shape into small balls, use pen cover or something suitable to press lightly at the centre to make a circle.
