Peanuts Cookies ~ melt in mouth version

200g biscuit flour /plain flour

100g icing sugar, sifted

200 grounded peanuts – I roasted for 15 minutes at 130C and then cooled before use

100ml peanut oil


Grind the grounded peanuts in a food processor with a few tablespoon of flour to make it more fine in order to achieve the melt in mouth version.

In a mixing bowl, mix flour, icing sugar and grounded peanut together before adding peanut oil and knead to form a soft dough.

Divide dough into 10g pieces and shape into small balls, use pen cover or something suitable to press lightly at the centre to make a circle.

Brush the surface with egg yolk and bake in pre-heated oven at 170℃ for 15 – 20minutes. IMG_3573

    Hi Jeannie, can i use brown or castor sugar instead of icing sugar? can i also replace butter or olive oil with peanut oil? Thanks.

      can replace icing sugar with castor or brown for the crunchy type. Can use corn oil or other vegetable oil. Olive oil has smell which might contradict with peanuts.

    Hi Sifu, above you mentioned in a mixing bowl mix all together before adding peanut oil , and knead to a form soft dough. So when should I add the peanut oil?

      First you mix the flour, icing sugar and the peanuts, use a hand whisk to mix all together. After that slowly add the oil and mix until everything is combined and you can roll the dough.
