Greentea bread rolls with redbean filling


Greentea Bread

Recipe source: Hycinth Lim (FB group member)

270g High protein flour
30g Plain flour
1/2 tsp Salt
10g Sugar
1 egg (large)
6g Instant yeast
1 tablespoon greentea powder
30g – Butter
120g – milk


Red bean paste (store bought or make your own)

Instructions to prepare dough:-

Using a stand mixer, mix all dough ingredients except butter and knead to form a rough dough. Add softened butter and continue to knead into a smooth and elastic dough (should pass the window pane test) and allow it to prove for 1 hr or until doubled in size.
After proofing, divide dough into 20 equal portions and wrap with red bean fillings.  Let dough proof again before baking in preheated oven at 160C Fan for 15 minutes.

Cool on the rack.

    If I don’t have stand mixer and knead with hand. How long is its taken for that? I mean the process will be changed or still the same. Thanks

      If you knead by hand, it will take longer. Perhaps a good 10-15 minutes of kneading. Can be done.

    Hi can i use BM to do kneading n proofing ?

      Yes of course! At the end of proofing just take it out and shape. Then do the 2nd proofing before baking.

    Thanks for sharing the recipe but I don’t get the last bit.
    May I ask Let dough proof again before baking in preheated oven at 160C Fan for 15 minutes” means the second proofing at 15 mins or again 1 hour?
    15 mins is the baking time?

      Hi Fion, Just proof until it’s doubled in size, time is depending on weather. Baking time is 15 minutes.
