Ingredients (makes about 18 muffins) as seen at Delishar
I only get 12 huge muffins!
1 cup whole wheat pastry flour (or all purpose flour if you don’t have any) – I used whole meal
1 cup all purpose flour
3/4 cup castor sugar
1/2 cup good cocoa powder
1 tsp espresso powder
1 tsp baking soda
1/2 tsp salt
1 cup chocolate chips
1 cup greek yoghurt
1/2 cup + 2 tbsp milk
1/2 cup vegetable oil
1 tsp vanilla bean paste/vanilla extract
1/4 cup chocolate chips for topping
Preheat oven to 180C. Line muffin pan with paper liners. In a large bowl, place the first 8 ingredients (dry ingredients) and whisk with a hand whisk to combine. In a separate bowl, add the next five ingredients and mix thoroughly (wet ingredients). Pour wet ingredients into dry ingredients and using a spatula, mix until batter is just combined but still lumpy.
Spoon batter into prepared liners and add a few chocolate chips. Bake for 18-20 mins (mine was baked for 25 minutes) or until skewer comes out with some crumbs sticking to it.. Cool in pan for 10 minutes before removing to a rack to cool completely.
